Knowles started off his career with Fairford Town FC, progressing through their U18 side and moving on up to their first-team at the start of the 2004-2005 season, in the Hellenic League Premier Division.
In November 2004, he moved on to Isthmian League Division One side Bashley FC where he made 26 appearances and scored five goals.
In June 2005, he signed for Southern League Premier Division side Salisbury FC and while mainly playing for their reserve side, he made four appearances for the first-team in 2005-2006 as they won the Southern League Premier Division.
In November 2005, he joined Wessex League Division One side Poole Town on loan and made seven appearances, scoring one goal.
During the 2006-2007 season, Knowles made three appearances for Salisbury FC in the National League South, as they won the play-offs during the same season.
In November 2006, he joined Southern League Division One South & West side Bashley FC on loan for three months, which was then extended until the end of the season. During his loan spell, he made 37 appearances and scored three goals as they won the league title.
In June 2007, Knowles signed for Bashley FC permanently, now in the Southern League Premier Division, and he scored 29 goals in 195 appearances while also captaining the team during the 2010-2011 season.
In September 2011, the midfielder chose to move overseas and he signed for Brisbane Premier League Premiers side Wynnum Wolves FC in the Australia fourth tier, where he won the league title with the team in 2011 and 2014.
Upon his return to England, the central midfielder signed for National League North club Gloucester City in November 2014, as well as dual registering with Southern League Premier Division side Cirencester Town at the same time, making four appearances for the Centurions.
In October 2015, Knowles dual registered with Southern League Premier Division side Frome Town and he made four appearances across the season for the side.
In December 2019, Knowles was released by Gloucester having made 151 appearances, scoring 11 goals, assisting 12 goals and being an unused substitute 14 times across a five-year period.
A week after his Gloucester release, Knowles signed for the Seagulls as well as taking up a position of first-team coach. He impressed during his 12 appearances throughout 2019-2020 at The Optima, and is set to continue for the new season.
